Freestyle is our line for expressive, layered coffees: where complexity and flavour move together. This lot comes from Las Lajas in Costa Rica's Central Valley, a family-run farm led by third-generation producers Oscar Chacón and Francisca Cubillo, with a longstanding focus on quality and environmental conservation.

Using their 'Black Diamond' process, ripe coffee is pulped with the mucilage left intact, then fermented anaerobically for 100 hours before being slowly dried on raised beds. The process reflects the farm's approach to producing distinctive coffees through careful, controlled fermentation and drying.
